The monkeys and I were in the test kitchen on this very rainy Thursday afternoon trying out a cookie recipe sent over from our friend Secret Chef. An oatmeal, white chocolate, Craisin cookie recipe to be exact.
We measured and mixed....
Sampled and smiled...
Rolled and realized that we were in serious trouble...
These cookies aren't your everyday run of the oat mill, type of cookies. Oh no, they are beyond delicious. But, don't take my word for it. Try out Secret Chef's recipe and see if you can eat just one of these bad boys. So chewy, with a zing of cranberry and that melt-in-your mouth white chocolate...
White Chocolate, Oatmeal & Craisin Cookies
Ingredients¾ cup Dark Brown Sugar, firmly packed
½ cup Granulated Sugar
2 each Large Eggs
2 teaspoons Vanilla Extract
1 ½ cups All Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Ground Cinnamon
½ teaspoon Kosher Salt
3 cups Old Fashioned Rolled Oats, uncooked (non-instant)
1 cup Craisins
1 cup White Chocolate Chips
Preparation
Heat oven to 350°F.
In large mixing bowl or the bowl of a stand mixer, beat butter and both sugars on medium speed of electric mixer until creamy.
Add the eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well.
Add oats and Craisins and White Chocolate Chips; mix just enough to combine and evenly distribute
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. (or into your mouth)
Bake 10 - 12 minutes or until light golden brown.
Cool on a wire rack for 10 minutes and devour!
If there are any left, be sure they are completely cooled and store in an air-tight container. .
Um, Secret Chef we never quite made it through the ten minutes of cooling and let's just say we may not have needed that air-tight container.
